While the base mix is inspired by the tall, fluffy British style, it’s incredibly versatile. Make traditional British rounds for a fancy Sunday morning tea, or toss in some frozen berries, cut them into wedges, and have a quick on-the-go breakfast with American-style scones! Try out:

INGREDIENTS

3 Tbs. butter / vegan butter (cold)

1 egg or substitute 

7 Tbs. yogurt (or vegan yogurt)

1/3 cup berries, raisins, nuts, or chocolate chips

INSTRUCTIONS

Preheat oven to 400°F. Prepare baking sheet by lining with parchment paper and setting aside.

Pour the mixture into a bowl and cut in 2 tablespoons of butter until pebbly, using a pastry cutter or two butter knives (or may be done with a mixer or food processor). Using a fork, stir in the egg and yogurt until the dough forms. Gently fold in fruit, nuts, or chips.

Turn dough onto a clean counter or pastry mat dusted with gluten-free flour. Pat dough to a thickness of ¾ - 1 inch. Cut into triangles or circles. Place onto a baking sheet and top with the remaining butter. 

Bake for 8-9 minutes, just until the tops are lightly browned, and a toothpick inserted into the center comes out clean, but not wet.
